🛒 Ingredients (Serves 4)

For the Haddock/Cod

  • 4 fresh haddock/cod fillets (about 170–200g each)
  • Salt and freshly ground black pepper
  • Plain flour for dusting
  • Vegetable or sunflower oil for frying

For the Traditional Beer Batter

  • 200g plain flour
  • 50g cornflour
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 330ml ice cold lager or pale ale

  • Vegetable oil for frying

🔪 Step by Step Instructions

1️⃣ Prepare the Chips

Peel the potatoes and cut into thick chip shop style chips.

Rinse under cold water to remove excess starch, then simmer in lightly salted water for 6–8 minutes until just tender.

Drain carefully and allow to cool completely.


2️⃣ First Fry

Heat the oil to 140°C.

Cook the chips for 6–8 minutes until softened but not coloured.

Remove and drain.

Leave to cool for at least 20 minutes.


3️⃣ Make the Batter

In a chilled bowl combine the plain flour, cornflour, baking powder and sea salt.

Gradually whisk in the iced cold beer until you have a smooth batter with the consistency of double cream.

Place the bowl over ice to keep it as cold as possible.


4️⃣ Prepare the Haddock/Cod

Pat the haddock/cod completely dry with kitchen paper.

Season lightly with salt and pepper.

Dust each fillet in plain flour before dipping into the batter.


5️⃣ Fry the Fish

Heat fresh oil to 180°C.

Dip each fillet into the batter, allowing the excess to drip away.

Carefully lower into the hot oil.

Cook for 5–7 minutes, turning once, until beautifully golden, crisp and cooked through.

Increase the oil temperature to 180°C.

Return the chips to the fryer for 2–3 minutes until crisp and deeply golden.

Drain well and season generously with sea salt.
